Æbleskivers

Yummy little pancake balls made with a weird dented pan and filled with whatever your heart desires!? Sign me up!

Ingredients
1 egg
3 tbsp melted butter
1 cup almond milk
1 1/4 cup flour
 2 1/4 tsp baking powder
2 tbsp sugar
chocolate, dried fruits, jam, etc.

Directions

With a hand mixer, combine the milk, melted butter, and egg together. (Optional Sift) In the flour, baking powder, and sugar, mixing to combine until smooth. With an aebelskiver pan on medium heat, slightly greased if you do not have non stick, and fill each hole with mixture. *Once you have each one filled, make a half turn of each pancake ball with a metal/wooden skewer going in the order you poured them. *This is the method I used and is the one that worked best in this condition. :)

Will work on the flipping technique. My guess is that the temperature of the pan needed to be lowered so that
the dough would not cook before I could cover the hole.

Some Honey Comb that i made without any corn syrup. All I did was replace the corn syrup with honey and it worked out just fine.

"Pizza"

As a normal person living in America, Pizza is a long time favorite. The only problem is that the pizza that is normally served contains a lot of unnecessary added fat that just creates empty calories and results in me wanting to eat more even though I am not hungry. This "Pizza" is just a solution I came up with in order to sooth my cravings lately.

Ingredients
 Pizza Base
2 1/2 cups AP flour
1 tsp instant yeast
2 tsp sugar
1/2 tsp salt
1 cup lukewarm water
(Optional) Some oil to coat your rising bowl.

Toppings
Cheese
A can of tomatoes
(Optional, but recommended) Tomato paste

Directions
In a stand mixer, mix in all of the dough ingredients until combined and smoothish.
Let rise for 1 hour is slightly greased bowl. A few minutes before you have to shape your dough, puree the can of tomatoes and add around 1-2 tsp tomato paste or to taste. Prepare your cheese and other toppings bowls. Take your dough once it has doubled in size and shape into anything you want. I did some thin crust pizzas and pizza rolls. Preheat oven to 450 and bake your creations for around 15 minutes or until brown on the edges.

Chiffon Cake

This is an amazingly fluffy and easy cake that will go great with any tea or warm drink!

Ingredients
4 egg yolks
20g sugar
1/4 tsp salt
60ml oil
70ml almond milk
100g flour
1/2 tsp baking powder
4 egg whites
Pinch of Cream of Tartar
100g sugar

Directions

Mix in sugar to your egg yolks, then add salt and oil, mixing to combine. Add milk and mix until fully incorporated. Sift in your flour and baking powder, then mix until there are not lumps. Make your meringue by adding a pinch of tartar (optional, but it stabilizes your egg whites. you could also use salt) and whipping your eggs to a foamy consistency before adding your sugar in thirds. Make sure your sugar is fully combined before you add the next third. Whip to stiff peaks. Put a dollop of the meringue into the egg yolks and gently incorporate it. After, pour egg yolk mixture into the egg whites and fold until just combined. Make sure you do not over mix and destroy those beautiful air pockets you just created! *Place in a non greased/non parchment lined spring tin and bake at 340 f for 35 min or until it is golden on the top. Once it is cooked, pull out of the oven and rest upside down by placing 2-3 bowls on the edge of the pan to suspend the cake.

*Do not skip these steps as it is very important to the fluffiness of your cake. You want the batter to climb up the wall of your tin so that it becomes extra fluffy. Then resting it upside down stretches the cake, resulting in a spongier consistency.

Pusheen Cookies

Ingredients

100 g room temperature butter
80 g sugar
1 egg
200 g flour

3 tbsp Meringue Powder
4 cups Powdered Sugar
5 tbsp Water
Black Food Coloring

Directions



With a spatula, mush together the butter and sugar. Then mix in your egg and sift in your flour. Take your dough and refrigerate wrapped in plastic wrap for 30 minutes. Once chilled, lightly flour your surface and roll out your dough to a 1/4 inch thickness. Bake them for about 10 minutes at 350 f ( or until slightly browned). 

Beat the meringue powder, sugar, and water until stiff peaks form. Divide into 3 bowls. Make 3 shades of gray (I used about 8 drops for the dark gray, 5 for the gray, and 3 drops for the light gray, but this may vary depending on which food coloring you use). Make sure to cover your bowls with a damp towel so that the icing does not dry out. The darker color should a stiffer, but pipe-able consistency. Add water drops at a time to make it the right thickness. Pipe on the outside of the cookie. Wait until dried. Add 3-4 drops of water to the gray and pipe whiskers and the head/back bumps.Wait until dry. Add 4-5 drops of water to the lighter color so that it does not keep it's shape, but is not too liquidy. Sushi

This may not look appetizing, but it sure was tasty!

Ingredients
1 Rice Cooker Cup of Rice (About 3/4 US cups)
1 tsp Rice Vinegar (Optional)
Salt
4 pieces of Large Nori
Fillings (Salmon, cucumber, avocado, etc.)

Directions
Cook the rice and use right away. Place the Nori on a bamboo sushi roller, rough side up, and spoon enough rice to just lightly cover it. Place your fillings, which should be thin, lengthwise and roll by pulling the edge of the mat away from you and applying a slight pressure to the roll.
